Sugarless Wheat and Fruit Cookies
Ingredients required:
½C. butter, softened
1 egg
2 tsp. vanilla extract
1 C. whole wheat flour
1 tsp. baking powder
1/8 tsp. salt
1 C. unsweetened coconut, flaked
1 C. dates, no sugar, chopped
4 tsp. orange peel, freshly grated
1 C. pecans, finely ground
How to Make:
Mix together butter, egg and vanilla together in a large mixing bowl. In a small bowl, combine whole wheat flour, baking powder and salt. Add flour mixture, a little at a time, to combined mixture, beating after each addition. In a medium bowl, combine coconut, dates, orange peel, and ½C. Pecans; stir into cookie mixture. Divide dough in half and form into two logs, approximately 1-½inches in diameter. Place remaining pecans on a piece of wax paper. Roll logs in nuts. Wrap each log in waxed paper; chill for 1 hour. To Cook in the oven, slice logs into 1/8-inch rounds; place on an untreated cookie sheet. Cook in the oven at 350 degrees Fahrenheit for 10 to 12 minutes, until lightly browned
