Soft Almond Cookies
Ingredients required:
¼ C. light margarine
½C. sugar
2 eggs whites
½tsp. almond food extract
4 drops yellow food coloring
1 C. flour
½tsp. baking soda
12 toasted almonds cut in half
How to Make:
Preheat oven to 375F. Spray cookie sheet with oil spray. In bowl, Mix together margarine and sugar until light and fluffy. Add egg whites with almond extract, and food coloring. Mix well and set aside. Sift flour, baking soda, and salt; add to combined mixture. Knead only long enough to blend dough, but not toughen. Spoon onto prepared cookie sheet in about ¾-inch balls. Top with almonds. Cook in the oven 12 minutes. Cool on rack.
