Oatmeal FruitBar Cookies
Ingredients required:
1 C. quick cooking rolled oats
1 C. flour
½tsp. salt
½tsp. cinnamon
1 tsp. vanilla
Artificial sweetener equal to ½C. sugar
½C. shortening
2 C. fruit, canned, drained, water packed (save juice)
2 Tbs. reserved fruit juice
How to Make:
Mix all ingredients, except fruit and juice, until mixture becomes coarse crumbs. Add fruit juice to hold crumbs together. Press ½of the crumbs into an 8 by 8 inch square pan. Top with chopped or mashed fruit. Pat on remaining crumbs. Cook in the oven at 375F for 30 minutes. Cut bars when cool.
