Mock Short Bread Cookies

Ingredients required:

Nonstick vegetable spray

2 C. all purpose flour

1-½tsp. baking powder

½C. vegetable oil

¼ C. water

1 egg

2 packages sugar substitute (not aspartame)

1 tsp. vanilla extract

How to Make:

Preheat oven to 350 degrees Fahrenheit Spray cookie sheet with nonstick vegetable spray. Combine all ingredients to form soft dough. Roll or pat out onto floured board to thickness of ¼ inch. Cut 2-inch rounds and place 1-inch apart on prepared cookie sheet. Cook in the oven for 15 to 20 minutes until edges are a light golden brown.
