Gluten Free Almond Cookies
Ingredients required:
½C. butter or margarine
½C. brown sugar, lightly packed
1 tsp. almond extract
1 egg
½C. Crispy Rice flour (available from food distributor or health food shop)
2 C. crispy rice (crushed)
2 Tbs. chopped almonds
How to Make:
Preheat oven to 350 degrees Fahrenheit. Mix together butter and sugar until light and fluffy. Add almond extract and egg. Beat well. Stir in flour, Crispy Rice and almonds. Shape into balls, 1-inch in diameter; place on untreated baking sheet. Press with a floured fork to flatten slightly. Cook in the oven for 12 to 15 minutes until lightly browned.
